6 pork cutlets, about 1 ½ pounds
 Flour
Salt and pepper to taste
Olive oil
1 scallion, chopped
2 tomatoes, peeled, seeded and chopped
3 tablespoons capers, drained
½ cup white wine
1 tablespoon minced basil
1 tablespoon minced mint

Directions:
Directions:
Pound the pork cutlets to ¼ inch thickness.
On a sheet of paper toweling, mix the flour with salt and pepper to taste.
Just before cooking dredge the pork in the flour.
In a skillet, heat the oil and when hot but not smoking sauté the cutlets until golden on both sides.
Set meat aside and add the scallion, tomatoes, wine and cook until slightly thickened.
Return the pork and reheat over medium heat.
Arrange on a platter and sprinkle with the mint and basil.
