2 lb. potatoes, mashed
6 T. milk
1 T. butter, cut into chunks
1 T. flour
salt and pepper (to taste)
1 c. onion, chopped
1 c.carrot, chopped
1 c. mushroom, chopped
2 garlic cloves, minced or crushed
1-2 lb. ground beef
1 pt. beef stock
2 T. parsley flakes
1 c. cheddar cheese, grated

Heat oven to 375º.
Make mashed potatoes and set aside.
Use Dutch oven to brown ground beef, and half way through add onion and carrots. Once cooked, drain most of grease and add garlic. Cook for another few minutes on low heat. Add beef stock, parsley, and mushrooms, season with salt and pepper, cover and simmer on low heat for 15 minutes.
Place flour and butter in small bowl and mash together well. Add this mixture to ground beef gradually, stirring until all flour has dissolved and sauce has thickened.
Scoop ground beef mixture into an ovenproof casserole dish (8 in. square and at least 3 in. deep) and spread mashed potatoes completely over top. Bake for 25 min. Sprinkle cheddar cheese on top and return to oven for another 5-10 min., or until cheese is melted and potatoes are lightly browned.

For low carb cooking, replace the mashed potatoes with mashed cauliflower. For the best of both worlds, use 2-3 heads cauliflower and 2-3 potatoes (steamed then left to cool and dry), adding sour cream, cream cheese, butter, cream, or any combination of these. Be sure to season whatever you mash with salt!
