Casserole:
1 medium eggplant, peeled, quartered
1 medium onion, diced small
1/2 tsp. salt
water
1 cup grated Swiss cheese
1 egg, beaten
dash of ground red pepper
Topping:
1/2 cup crushed crackers ( Ritz or saltines)
4 Tbsp. butter, melted

Directions:
Directions:
In saucepan, cook eggplant, onion, salt, & a small amount of water until vegetables are tender. Drain well & mash vegetables. Mix in the cheese, egg, & red pepper. Pour into a lightly buttered casserole dish. For the topping, combine the melted butter & crushed crackers. Sprinkle over the casserole. Bake at 350º for 30 minutes.
