Salad:
1 lb. fresh spinach, trimmed
3 hard-boiled eggs, halved
6 to 8 slices bacon, cooked, drained, & crumbled
Dressing:
1 cup canola oil
5 Tbsp. red wine vinegar
4 Tbsp. sour cream
1/2 tsp. salt
1/2 tsp. dry mustard
2 Tbsp. sugar
2 TBSP. fresh chopped parsley
2 cloves garlic, minced
black pepper, to taste

Directions:
Directions:
Put spinach in large serving bowl. Refrigerate until ready to serve. Before serving, put all dressing ingredients in a jar & shake to combine. Pour dressing over salad & gently toss. Top with crumbled bacon & egg halves.
