3 very ripe bananas, mashed
1 cup raisins
1 cup pecan pieces
optional - 1/2 cup pecan meal

2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

1 1/4 cups sugar
1 1/2 sticks butter (NOT MARGARINE!)
3 eggs, lightly beaten
1/2 cup buttermilk
1 teaspoon vanilla

Directions:
Directions:
All ingredients should be room temperature.
Preheat oven to 350 degrees.
Use butter (NOT MARGARINE!) to grease two loaf pans.
Line the bottom of the pans with parchment paper or wax paper.


In first bowl mix together:
bananas
pecan pieces
raisins
optional - 1/2 cup pecan meal


In second bowl sift together:
flour
baking soda
salt


In a large mixing bowl cream the sugar and butter together well.
Mix in the eggs.
Start mixing in the flour mixture a quarter of a cup at a time. After the second quarter add the buttermilk or soured milk and the vanilla.
After all the flour is in and moistened, add the banana mixture.

Pour into prepared loaf pans, bake at 350 for 45 - 60 minutes or until a toothpick comes out clean.

This freezes well and stays moist. You can leave out the raisins without changing anything else and you'll still be ok. This is a very, very old recipe and I think it's the best banana bread around.
