For Cake:
3 c flour
2 c sugar
2 tsp baking soda
1 tsp salt
4 tbsp (1/4 c) cocoa
3/4 c oil (canola, vegetable)
2 tbsp vinegar
1 tsp vanilla
2 c cold water

For Soft Fudge Icing:
1/3 c (2/3 stick) butter or margarine
1/4 c cocoa
1/4 c water
1 1/2 tsp vanilla
2 1/2 to 3 c confectioner's sugar

Directions:

Preheat oven to 350º. 9 x 13 cake pan, ungreased. For cake: Combine dry ingredients. Add oil, vinegar, vanilla and cold water. Mix until combined. Do not over mix. Pour into pan and bake for 30 to 35 minutes or until done. While cake is baking, make icing. In a medium heavy saucepan, combine butter, cocoa and water. Stir over medium heat until mixture is smooth. Stir in vanilla. Remove from heat and put into mixing bowl. Gradually add enough confectioner's sugar until icing resembles a soft, fudge-like consistency. Beat until smooth. When cake is done and removed from oven, allow it to cool slightly and ice with the soft fudge icing.

What do you call the stuff you put on top of a cake? Icing? Frosting? A food dictionary says that "frosting" is usually thick and fluffy and made with butter or cream while "icing" is a thin, sugary glaze that hardens upon cooling. While that may be what you'd learn in culinary school, that's not always the case in family recipes--the baker will often be directed to "frost the cake with icing" or "ice the cake with frosting!"
