For Cake:
2 c flour
2 c sugar
3 c grated carrots
2 tsp cinnamon
1/2 tsp salt
1 tsp baking powder
2 tsp baking soda
4 eggs
1 1/2 c oil
1 tsp vanilla

For Icing:
1 - 8 oz pkg cream cheese
1/2 c butter or margarine
1 lb confectioner's sugar
1 c chopped pecans
1 tsp vanilla

Directions:
Directions:
Preheat oven to 325º. Grease a bundt pan or can use 3 - 9 inch cake pans . For cake: Combine flour, sugar, cinnamon, salt, baking powder and baking soda. Mix well. Stir in carrots and mix well. Beat in eggs, oil and vanilla until well blended. Pour into bundt pan and bake for 1 hour or until done. For icing, combine all ingredients, except for chopped pecans, and mix until well combined. Stir in pecans. Spread over cake, once it has cooled.
