2 Cups Leftover Rice (traditionally it is basmati, but this recipe would work with any rice)
1 Tbsp Oil
1/4 Tsp Black Mustard Seeds
1 Tsp Garam Masala
1 Tsp Turmeric
1-2 Serrano Peppers (optional)
1 Tsp Red Chili Powder
Salt to taste

Heat the oil in pot on medium heat. Add the black mustard seeds. Be careful! The seeds should start popping. Once the popping dies down, add the rice. Break up the rice until it is evenly coated in the oil and mustard seeds. Add the salt, peppers, and remaining spices. Mix together well and cook for 10-15 minutes until the rice is hot and the spices have been thoroughly incorporated.

*Note: Indian spices have different intensities depending on which brands you use, so the measurements are approximate. You may find that you will need more or less than listed.

Bhaat means rice and Vaghar is the act of heating the oil and black mustard seeds, hence Vagharelo Bhaat. This is the Gujarati go-to recipe for when we have leftover rice in the house. You can also add any vegetables you have on hand if you wish. I sometimes like to add onions, peas, and carrots.
