Directions:Heat oil in a large soup pot, add the ham hock and sear on all sides. Add the onion, celery, bell pepper, and garlic, cook for about 5 minutes. Add the black-eyed peas, stock, bay leaves, thyme, and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock. Adjust seasonings, and garnish with green onions. Serve over rice. |

Notes: Every New Year's day my mother would make a traditional Southern meal for good luck. Hoppin' John was one of the dishes along with any kind of greens (mustard, collards or turnip), either fried chicken ,pork chops,or pork roast and corn bread. My Uncle Herman would always give a big party and since he was the president of one of the largest banks in Jackson, Deposit Guarantee had access to new dimes which he gave to everyone. In NYC we carry on the tradition and have added a wonderful Greek bread, Vasilopita, made with mahlepi seeds which has a dime hidden in it. The Greek celebration blesses your house and brings good luck throughout the year.The person who gets the slice of bread with the dime has extra good luck for the new year.
