4 Red Pears, peeled, cored. Each half quartered lengthwise.
2 Tbsp Olive Oil
2 Pkgs. (5 Ozs) Baby Arugula Blend
1 Pkg. (5 Ozs) Melissa's Pomegranate Arils (Seeds)
1 Cup (4.2 Ozs) Food you Feel Good About Cashew Blend
1/2 of a 4 Ozs pkg. Vermont Crumbled Classic Goat Cheese
1/2 Cup Lemon Vinaigrette
Salt & Pepper

Directions:
Directions:
Preheat oven to 450o. Toss pears gently with olive oil; season with salt & pepper. Arrange in single layer on foil lined baking sheet.

Bake 35-45 minutes until golden brown and carmelized on the bottom. Remove from oven; cool completely.

Combine salad greens, pomegranate seeds, cashews and goat cheese. Toss with 1/4 cup dressing. Mound on serving plate, platter or individual dishes.

Toss pears with remaining dressing; arrange on salad.
