3 lbs ground chicken
2 jars sliced mushrooms
3 small cans of sliced black olives
2 cans whole peeled tomatoes
1 head of garlic
white vinegar
salt
pepper
rice

Directions:
Directions:
Chicken:
Crush 1/2 of the head of garlic and saute with the ground chicken until the chicken is fully cooked. (No need for oil, unless desired.) Season with salt and pepper to taste, do not drain. Add white vinegar to the chicken and garlic to taste.

Sauce:
Crush remaining 1/2 head of garlic and saute with mushrooms (drained) and sliced black olives (drained) until mushrooms are golden brown. Add 2 cans of whole peeled tomatoes (dice tomatoes to desired size). Add salt, pepper and white vinegar to taste. Simmer for 10 minutes.

Combine:
Combine chicken with sauce right before serving and serve over rice adding salt, pepper and vinegar as needed.

My husband is a wonderful cook and he really enjoys creating meals. However, things were getting frustrating because he was unable to find a dish that the entire family enjoyed as a whole. So.....he put this together and voila'...the birth of Chicken DeSantis!
