6 leaves radicchio
8 leaves arugula
6 large romaine leaves
1/4 cup extra-virgin olive oil
2-3 tbs. red wine vinegar (to taste)
salt and freshly ground pepper

Directions:
Directions:
1. Wash all the lettuces and drain well. Dry thoroughly.
2. Tear into small pieces and place in a salad bowl.
3. In a small bowl, whisk together all the dressing ingredients.
4. Drizzle the dressing over the salad and toss gently.
5. Serve at once.

My mother LOVED arugula! She used to grow it in pots, even inside, and could eat it fresh all year as it grew very quickly.
