1 1/2 cup canola or vegetable oil
2 cups sugar
2 eggs
1 teaspoon vanilla
1 oz red food coloring
2 Tablespoons cocoa (optional leave out for a really bright red cake)
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup buttermilk
1 teaspoon vinegar

Icing:
3/4 stick butter
1 (8oz) package cream cheese
1 pound powdered sugar
1 cup pecans, chopped

Directions:
Directions:
Cake: Mix together oil and sugar. Add eggs, vanilla, food coloring, and cocoa. Add 1/2 of the following: flour, soda, salt and buttermilk. Mix well. Add the remaining part of ingredients and vinegar. Bake at 350º for 30 to 35 minutes. Let cake cool before frosting

Icing:
Cream butter, cream cheese, and powdered sugar together. Sprinkle pecans on top of frosted cake.
