2-3 lbs broiling chicken halved
1/4 chopped parsley

Lemon Sauce:
2 cups fresh lemon juice
1 cup olive oil
1 tbsp red wine vinegar
1 1/2 tsp oregano
salt and pepper to taste

Broil chicken halves, turning once, for about 30 mins until skin is golden brown and juices run clear when bird is pierced with fork. Remove chicken from broiler and cut each half into six pieces (leg, thigh, wing, 3 small breast pieces).

Lemon Sauce:
Whisk together lemon juice, oil, vinegar, garlic, oregano, salt and pepper. Whisk or shake vigorously before using.

Place chicken on baking sheet with sides. Pour about 1/2 of lemon sauce over chicken and put chicken under broiler for 3-4 mins.

Plate chicken and pour lemon sauce that has been heated with parsley added over chicken. Serve with lots of crusty bread to absorb the sauce.
