Dry ingredients:
1 ½ cups spelt flour
½ cup brown sugar
3 teaspoons baking powder
¼ teaspoon salt
Wet ingredients:
1/3 cup butter, melted
1 cup milk (I used reconstituted non-instant powdered milk)
1 egg

Directions:
Directions:
1. In one bowl whisk together dry ingredients. In another bowl whisk together wet ingredients then gently combine wet ingredients into dry ingredients just until mixed (batter will be runny as spelt flour soaks up a lot of liquid). Add ½ cup or more chocolate chips. Spoon into 12 greased muffins tins.

2. Bake 325 degrees for about 15 minutes or until toothpick comes out clean (I have a convection oven so your time/temperature might be different.) Do not over bake.

I bought my spelt flour at Fred Meyer in their health food section or buy online.
If you freeze these muffins and then take out one each morning and place it on a plate and microwave it for 25 seconds it will taste like it just came out of the oven and the chocolate chips will be nice and gooey!
