3 1/2 c sifted flour
3 tsp baking powder
1 tsp salt
1 tsp baking soda
2 c mashed ripe bananas (4-6)
1 1/2 c sugar
3 eggs
3/4 c milk
1/2 c chopped pecans or walnuts

Directions:
Directions:
1. Sift together dry ingredients.

2. Mash bananas with a mixer or fork and add lemon juice.

3. Mix cream, shortening, and sugar with electric mixer at medium speed. Add eggs and beat thoroughly until very light and fluffy (4 min +).

4. Add dry ingredients alternately with milk. Then fold in bananas and nuts. Beat after each addition.

5. Pour into 2 loaf pans (greased & sugared). Bake at 350º for 1 hour or until done. Cool in pans for 10 minutes then remove to wire rack. Wrap in foil or plastic and cool overnight for easier slicing. Or partially freeze and slice.
