1 c. packed brown sugar or spenda brown sugar mix
2 c. chopped pecans
2 beaten eggs
1/2 c. all purpose flour
2/3 c. softened butter

Preheat oven to 350º. A nonstick mini cupcake pan works best for this recipe. Grease muffin cups generously to avoid sticking.

In a large bowl, stir together brown sugar, flour and pecans. In a separate bowl, beat the butter and eggs and then combine in dry ingredients.

Spoon batter into cups until about 2/3's full. Bake for 12-13 minutes. Cool in pan on rack for approximately 5 minutes. You may need the assistance of a butter knife to pop out each muffin.
