2 T. oil
8 oz. bulk sausage (hot or mild)
2 chopped, jalapeno peppers
1 chopped, medium onion
2 c. Newman's Diavolo sauce
2 T. butter
4 c. shredded lettuce
8 eggs
1/4 c. water
salt and pepper
4 large warm tortillas
4 oz. shredded Monterey jack cheese

Directions:
Heat 1 T. oil in frying pan, Saute sausage and drain. Wipe grease from pan and heat remaining oil. Saute onion and jalapenos till tender. Add Diavolo sauce and simmer for 15 minutes.

In another frying pan, melt butter. Beat eggs, salt, pepper and water and pour into pan and scramble.

Fold in half of the Diavolo mixture into the eggs. Spoon 1/4 of the mixture into each tortilla. Roll up and place on broiler pan. Pour remaining sauce over tortillas and sprinkle with the cheese. Broil to melt cheese. Garnish with lettuce
