2 slices bacon, cut in thin strips
1 large onion, finely chopped
1/4 lb mushrooms, sliced
1 clove garlic, minced
2 medium carrots, thinly sliced
49.5 oz chicken broth
1 lb tomatoes
1 t salt
1 t basil
1/4 t thyme
1/4 t white pepper
4 oz spaghetti or vermicelli
1/2 lb snap peas
1/4 c parsley
Grated Parmesan Cheese

Directions:
Directions:
Cook bacon over medium heat. until brown, add onions, mushrooms, garlic and carrots. Stirring until onion is soft. Add broth, tomatoes- with juice, salt, basil, thyme and pepper. Bring to boil. Cover, reduce heat and simmer 15 minutes. Bring soup to boil and add pasta. Bring to boil and cook uncovered until nearly done. about 10 minutes. Add peas and parsley and boil 2 minutes. Seasoning as desired. Cheese to taste. Serves 8.
