2 lb Turtle steaks
1 teaspoon Salt
1 teaspoon ground black pepper
2 Lg Sweet onions, chopped
1 Lg bell pepper, seeded and chopped
4 med Tomatoes, diced
3 Bay leaves
1 Clove garlic, crushed
1 cup Mushrooms
2 Lemons
3 cups chicken stock

Directions:
Directions:
Trim turtle steaks into 1 1/2-inch squares, season well with salt and pepper, squeeze lemons over meat and let stand awhile. Add chopped onion, bell pepper, tomatoes, bay leaves, crushed garlic clove and mushrooms. Moisten well with stock and smother very slowly on low heat, in a tightly covered skillet until turtle is tender. Serve with big mounds of rice.
