2 chicken breasts, skinned
oil
salt
pepper
1 c potatoes, diced
1 c carrots, diced
1 c onion, diced
1 clove garlic, diced -optional
chicken broth
1/4 c flour
1T lemon juice
1 t tarragon
1 T lemon zest

Directions:
Directions:
Grill chicken in oil. Drain off excess fat; dice into 1 inch pieces. Boil the vegetables until tender. To make sauce add flour to small amount of cold broth. Stir till smooth. Add to warm broth. Boil; add meat and vegetables. Last add seasoning to taste. Put in pie shell and cook 375º for 30 minutes.
