"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

1 slice bread
1 egg
Salt and pepper to taste
Butter

Directions:
Melt about a tablespoon of butter over medium heat in a skillet. Tear a hole in the center of the bread. Place bread in the skillet and crack the egg on it so that the yolk ends up over the hole. Salt and pepper to taste. You can break the yolk before flipping the bread over and cooking the other side. Serve with syrup. This is a quick version of French toast.

Personal Notes:
While there are different names for this (Toad in a Hole being one), Grandma Yelton called it Chicken in a Basket or Hole. It was always fun to watch her fix this because some mornings, once she had put the hole in the center of the bread, she would twirl it around on her finger for fun.
