Deviled Eggs Recipe

Hard boil as many eggs as you wish to "devil." Just remember, you get 2 servings from each egg. Peel eggs and cut them in half, putting the cooked yolks in a food processor or mixer. Add enough Miracle Whip to process them until they are a creamy consistency. For 1 dozen eggs, start with 1/2 cup but it will probably take more than that. Add salt and pepper to taste and a dash of mustard. Process again. Then add vinegar to taste--starting with a teaspoon or two. Since the Miracle Whip can be sweet, it all depends on how much a tart taste you like. Once yolk mixture tastes like you want it to, fill egg halves and refrigerate until serving. TIPS: Older eggs are much easier to peel. And for putting the filling into the eggs, the simplest way is to put the yolk mixture into a sandwich bag, twist the top to close it, snip off a small part of the corner and "pipe" the filling into each egg.

After Grandma Yelton died, everyone looked to me to fix the deviled eggs for family dinners. I guess it was because she and I stood side by side for so many years cooking together. I often tell people that when I got married, I couldn't fry an egg but I could fix a turkey dinner with all the trimmings without blinking an eye and it was all because of her teaching me what to do. I still follow many of her kitchen rules to this day. Here's just a few of them: never brush your hair if you are wearing the clothes that you will be cooking in, never lick the food off of your fingers unless you immediately wash your hands afterwards, turn on the radio and sing--good music makes cooking fun, and taste what you're cooking so you'll know if it's good. And to this day, there's still not a time when I'm cooking a turkey that I don't remember the fun we had and any time I hear a Conway Twitty, George Jones, or Loretta Lynn song, I am transported right back into her kitchen.
