2 C. Sugar (cane work better than beet)
2/3 C. Evaporated Milk (1 small can)
80 Small Marshmallows (10 large cut up)
1/2 C. Butter (1 stick butter)
1/4 tsp.Salt
1 tsp. Vanilla
1 C. Chocolate Chips (semi-sweet)
1 C. Pecans (optional)

Take the stick of butter and butter the inside of a 3 quart sauce pan (drop the rest in the pan) Combine sugar, butter, milk, marshmallows, vanilla, an salt in a heavy saucepan, bring to a rolling boil and boil 6 minutes(I usually turn the heat down to medium so it just keeps boiling but keeps it from burning) Stir occasionally. Put chocolate chips into a large bowl and pour hot mixture over the chip and stir to thicken. I have poured the chips in the cooking dish but the mixture thickens to fast and can cause grainy fudge) Pour into and 8 x 8 pan or I fill metal cookie cutters at Christmas and give them as presents.

I have made this since I was in high school over 50 years. I also find after stirring the sugar, butter, milk etc. if I rinse off my stirring spoon it keeps the fudge from becoming grainy.
