2 pkg. 12 oz dried peaches
½ c. sugar
2 T. fresh lemon juice
½ tsp. Ground cinnamon
½ tsp. Nutmeg
1 Pastry shell roll
½ c. Vegetable oil

Directions:
Directions:
Cooked dried peaches according to package instructions. Drain and mash peaches. Place into a large mixing bowl and add sugar, lemon juice and spices. Mix well and set aside. Roll out dough, cut into 5 inch rounds. Place 3 tablespoons of peach filling on half of round. Moisten edges with water, fold in half, pressing edges together with a fork to seal. In a large skillet, heat vegetable oil, fry pies in batches until golden brown on each side, turning only once. Drain well on paper towel. Serve hot or cold.

Variations: mix dried apricots with peaches.
