1 cup organic orange rind, cut in tiny strips with kitchen scissors
1/2 cup honey
2 tbsp. frozen orange juice concentrate

Directions:
Directions:
Simmer in a heavy saucepan for about 10 minutes, stirring frequently.
Add half of this orange glaze to the roasted beets (see "Roasted Beet Ratatouille" in vegetable section of cookbook)

To make your salad, fill each plate with torn pieces of Bibb lettuce and/or mixed spring greens. Top with beet/orange mixture. Add thin slices of oranges cut in fourths and candied pecans. A dash of "Honey Blush Dressing" (look for recipe in this section of cookbook) is the final touch. Enjoy every bite!

The orange glaze is also good with a cranberry/apple/walnut salad; or an ice cream topping. Use your imagination!
