1 deep dish pie crust (a frozen one works well)
1/2 c walnuts, chopped (Pecans work well too)
1/2 c plain flour
1/2 c light brown sugar, packed
4 Tbsp. melted butter
1 egg white
1/4 c white sugar
2 Tbsp cornstarch
1 tsp. cinnamon
3 lbs gala apples
1 Tbsp. lemon juice

1. Prick bottom and sides of the pie crust with a fork. Bake at 375º 12 to 15 minutes, or until the crust is light golden brown. Immediately brush the bottom and sides of the hot crust with a light coating of egg white. Reset oven to
425º

2 While crust is baking, mix walnuts, flour and brown sugar in a bowl together. Work in butter with fingertips until mixture resembles course crumbs. Set aside.

3. Meanwhile in a microwaveable large bowl combine sugar, cornstarch, and cinnamon. Toss in apples and lemon juice. Cover with waxed paper and microwave on high for 12 minutes, stirring halfway through. Spoon filling into crust. Sprinkle walnut topping over filling. Bake 12 minutes or until the topping is golden brown. Cool on a wire rack.
