7 cups peeled, chopped and cored green tomatoes
2 cups of chopped red onions
5-10 seeded and chopped jalapeņo or scotch bonnet peppers
1/2 c. lime juice
1/2 c. loosely packed cilantro
2 cloves or peeled and finely chopped garlic
2 tsp. cumin
1 tsp. dried oregano
1 tsp. each of salt and pepper

Directions:
Directions:
Bring the first 4 ingredients to a boil. Add everything else, reduce to simmer and simmer for 5 minutes. Makes 6 half pint jars. Process in water bath for 20 minutes. To process, set the jars in a deep pot of simmering water for 20 minutes. Make sure the water is an inch or so above the tops of the jars.

To do in pints add 5 minutes to the simmer time.
