1 large or 2 small sweet potatoes
salt
pepper

Omelet Mixture:
6 whisked eggs
1 tsp. Herbamare seasoning (or your preferred seasoning)
1 finely chopped sautéed onion
1 finely chopped sautéed red pepper
2 cloves minced sautéed garlic
2 c. lightly steamed, thinly sliced broccoli
1 c. sliced chicken sausage*

Directions:
Directions:
Lightly grease 1 pie dish. Thinly slice sweet potatoes. Arrange sweet potato slices around the bottom of the pie dish to create your crust. Sprinkle sweet potato crust with sea salt and ground pepper. Pour omelet mixture over top.

Bake at 350º for about 40 minutes.

*use Applegate Farms, Chicken and Maple Breakfast Sausage which is super delicious and conscientiously produced.

You can add half c. of your favorite shredded cheese blended into the Omelet mixture or substitute asparagus for broccoli.

This egg bake is easy-peasy comfort food favorite packed with veggies and protein. Its incredibly easy to whip up for breakfast, lunch or dinner. It stores and reheats well for leftovers.
