Ingredients:  
1/2 jar roux
1 chicken, cut up into serving pieces
4 quarts water
1/2 cup celery, chopped
1/4 cup bell pepper, seeded and chopped
1/4 cup green onions, chopped
1 pound sausage, cut into bite sized pieces
salt and pepper to taste
1 teaspoon or 1 Tablespoon garlic, minced (your choice)

Boil roux for 30 minutes in water. Add pieces of chicken, onion, celery, bell pepper, garlic, sausage and season to taste.

Hint: Cut up sausage; put in pot of water. Bring to a boil for about 10 minutes, then drain water off. Add sausage to gumbo. This gets rid of some of the fat in the sausage. I like garlic so season to your taste. Serve over cooked rice.
