5 to 6 mirlitons
1 to 2 cups grated cheddar cheese, divided
1 cup Italian bread crumbs
1 stalk of celery, chopped
1 cup onion, chopped
2 teaspoons minced garlic
1 to 2 pounds cooked and peeled crawfish
5 slices of bacon, cooked
1/2 stick butter
salt and pepper to taste
1/4 teaspoon of liquid crab boil

Cut mirlitons in half lengthwise. Spoon out seeds. Boil mirliton halves in a large pot, with salt to taste. Boil until tender, then drain. Scoop out the pulp and chop. Drain liquid. Saute' celery, garlic and onion in butter until tender. Add crawfish and liquid crab boil. Mix crawfish mixture and bacon, crumbled, into mirliton and 3/4 cup bread crumbs. Mix in 3/4 cup cheese. Salt and pepper to taste. Pour mixture into a buttered dish. Top with remaining cheese and breadcrumbs. Bake at 350 º until cheese is melted, about 20 to 25 minutes.
