Everett's Guinea Gumbo Recipe

1 guinea hen, cut up and seasoned
4 quarts water
4 heaping Tablespoons roux
1 large onion, chopped
1 stalk of celery, chopped
1/2 cup green onions, chopped
salt and pepper to taste
1 or 2 teaspoons parsley chopped

Directions:
Directions:
Dissolve roux in water over medium heat and let simmer for 1/2 hour. Add guinea hen and seasoning and bring to a boil. Lower to medium heat, until guinea is tender, about 1 hour. Add green onions, and parsley about 10 to 15 minutes before serving and season to taste. Serve over cooked rice. Add file' to pot and/or bowl of gumbo to taste.
