2 - 4 cloves garlic
1/4 teaspoon red pepper flakes (optional)
1 tablespoon fresh thyme leaves or 1/2 teaspoon dried thyme
2 cups Panko bread crumbs
1 tablespoon lemon or lime zest
2 tablespoons olive oil
2 tablespoons melted butter
1/4 cup Dijon mustard
1/4 cup white wine

Directions:
Directions:
Place garlic, thyme, red pepper flakes, 1 teaspoon salt, and 1/2 teaspoon ground pepper in the blender and process until the garlic is finely chopped.
Add Panko bread crumbs, lemon zest, olive oil, and melted butter.
Blend to moisten the bread crumbs and put on a plate.
Mix wine and mustard in a small bowl.
Pat chicken dry and season with salt and pepper.
Dip each piece of chicken in the wine mix to coat all sides.
Press the top of the piece into the bread crumbs. Place crumb side up on a cookie sheet lined with parchment paper.
Press remaining crumbs on the chicken.
Bake at 350 º F for 40 minutes. Increase the temperature to 400 º F for 10 minutes.

Can use gluten free bread crumbs and gluten free mustard to be suitable for a gluten free diet.
