Polynesian Meatballs & Rice Recipe

20 oz crushed pineapple, divided
20 oz ground pork (turkey or chicken)
2 cup Minute Brown Rice
3/4 cup green onion, thinly sliced and divided
3/4 cup Lawry teriyaki marinade, divided
1 egg
1 tsp. ground ginger
1/2 tsp. ground nutmeg
4 Tbsp Orange marmalade
Polynesian Rice:
2 cup Minute Brown Rice
1 3/4 cup orange juice
1/4 tsp salt
1 Tbsp grated lemon peel
1 Tbsp lemon juice
1 cup pineapple tidbits, drained

Directions:
Directions:
Preheat oven to 350*.
Prepare rice according to package directions
Drain 1/2 cup pineapple for meatballs. Reserve remaining pineapple and juice for sauce.
Combine ground meat, cooked rice, 1/2 cup pineapple, 1/2 cup green onions, 1/4 cup teriyaki sauce, beaten egg, 2 Tbsp. marmalade, ginger and nutmeg in large bowl. Mix well
Scoop mixture and gently roll into meatball about golf ball size (about 32 meatballs)
Place meatballs on aluminum foil-lined baking sheet with sides.
Bake for 25 to 30 minutes or until meatballs are done. Remove from foil after resting for 5 minutes out of oven.
While meatballs are baking, make sauce, combining pineapple and juice, remaining 1/2 c. teriyaki marinade and 2 Tbsp orange marmalade in medium sauce pan, heat to boiling. Reduce heat and simmer uncovered 3 to 4 minutes. Stir in remaining green onions.
Top meatballs with sauce.
I used this amount of sauce for 15 meat balls, so would suggest you double meatball sauce for the full batch.
Rice:
Follow package directions for preparing rice using orange juice & salt, instead of water. When cooked add lemon peel and juice. Stir in and then add pineapple tidbits.
This rice can be served hot or cold. Also almonds can be added to rice if desired.

meatballs can be made and baked the day before and even covered with sauce until ready to bake to warm up before serving.
I used twice the amount of the sauce on the meatballs to make them moister. You can use the tidbits and juice from the rice recipe to make more sauce.
