2 egg whites
Confectioner's sugar
1/8 tsp vanilla
Peanut Butter

One medium-sized potato, peeled, boiled, and put through a ricer
Confectioner's sugar
1/8 tsp vanilla

Directions:
Directions:
Version one: Add vanilla to egg whites. Beat until real stiff. The add confectioner's sugar, by hand, until it looks like dough and is not sticky. Divide dough into two pieces. Put enough confectioner's sugar on a piece of waxed paper so you can roll the dough out without it sticking. Roll out dough until it is flat. Then spread peanut butter over it. Roll up into a log and slice into desired thickness. Repeat with remaining piece of dough. Store in an airtight container. Version two: Make sure potato is mashed real fine (no lumps) and mix vanilla in it. Add confectioner's sugar and fix the same way as you would if using the egg whites.

This recipe was handwritten by Grandma Yelton for Mom. Given the yellowing of the paper, she probably mailed it to Mom when she was first married and living in Michigan. In giving her the second version, Grandma says, "Susy, some people make the same kind of candy out of a potato." There are more modern versions of this recipe using butter and milk as the binder instead of egg whites or potatoes but they do not have the same taste or flavor as the old-fashioned recipes.
