1 c sifted flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp sugar
2 tbsp butter, melted
1 egg, beaten
1 c buttermilk

Directions:
Directions:
Resift dry ingredients together into mixing bowl. Combine buttermilk, egg, and melted butter then add to dry mixture. Stir until just combined. There may be small lumps. Over stirring will result in a tougher cooked pancake. Pour onto a hot greased griddle. Cook until the top of the pancake bubbles, then flip and cook for an additional minute or two until cooked. Do not press down on pancakes while cooking. Makes about 6 pancakes.
