1 lb lean ground beef
1 medium onion, chopped
1 1/2 c medium heat salsa
1 - 8 oz can tomato sauce
1 chicken bouillon cube
1 1/2 c uncooked rice

Garnishes:
chopped or shredded lettuce, chopped tomatoes, sour cream, shredded cheddar cheese, tortilla chips, sliced pitted black olives, additional salsa

Directions:
Directions:
Cook beef and onion in skillet. Drain off excess fat. Add salsa, tomato sauce, and bouillon cube. Bring to a full boil. Cover and reduce heat and simmer for 5 minutes. Meanwhile, prepare rice as directed. To serve, place rice on platter and pour beef mixture over rice. Top with garnishes as desired.
