2 c water
2 c raisins
2/3 c firmly packed light brown sugar
2/3 c sugar
3 tbsp cornstarch
1/8 tsp salt
1/4 tsp cinnamon
1 tbsp lemon zest
3 tbsp lemon juice
2 tbsp butter or margarine

Directions:
Preheat oven to 425º. Prepare double crust for a 9 inch pie pan.

Bring water to boil in a medium-sized saucepan. Add raisins and cook, uncovered for 3 to 5 minutes or until raisins are plump and tender. Remove pan from heat. In a small bowl, combine sugars, cornstarch and salt. Stir into raisins and return saucepan to heat. Cook mixture, stirring constantly, until it come to a boil and sauce thickens. Reduce heat and cook for 1 minute. Remove from heat and stir in lemon zest, lemon juice, and cinnamon. Pour into pie pastry. Dot with butter. Cover with second crust, crimp and seal edges,and cut slits in the top to allow steam to escape while cooking. Bake for 35 to 40 minutes.

Grandma Yelton wasn't much on sweets (that must be where Mom got that from) but she loved this pie. Dad did too but that isn't a surprise given the sweet tooth he had!
