For meatloaf:
2 lbs lean ground beef
3/4 c milk
1 1/2 c soft bread crumbs
2 tsp salt
1/8 tsp pepper
1 medium-sized carrot, grated
2 eggs, slightly beaten
1 medium onion, finely diced

For topping:
1/4 c ketchup
2 tbsp brown sugar
1 tbsp yellow mustard

Directions:
Directions:
Preheat oven to 300º. Pour milk over bread crumbs. Add ground beef, salt, pepper, carrot, onion, and eggs. Combine until thoroughly mixed together. Put into a 9x5 loaf pan or place on a rimmed baking sheet and shape into a loaf. Mix together topping ingredients and spread over meatloaf. Bake for 1 1/2 to 2 hours.

For years, Mom fixed a very basic meatloaf until she began working in the restaurant. Once she got this recipe, she never made meatloaf the old way again. This meatloaf remains moist and tender and holds it shape well when baking.
