For Cake:
1 1/4 c boiling water
1 c oats (regular or quick cook)
1 1/2 c sifted flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 c butter or margarine (1 stick), softened
1 c sugar
1 c light brown sugar, packed
2 eggs

Topping:
1 1/3 c flaked coconut
1/2 c light brown sugar, packed
1/4 c butter or margarine, melted
1/4 c evaporated milk
1/4 tsp salt
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350º. Grease a 9x13 cake pan.
For cake: Pour boiling water over oats and set aside. Mix flour, baking powder, baking soda, salt and cinnamon. In a separate bowl combine butter, sugars, and eggs and beat at high speed for 5 minutes. Stir in oats with a spoon, then stir in flour mixture. Pour into prepared pan and bake for 40 minutes or until done.
For topping: Combine all ingredients and spread over warm cake.

When we were growing up, we never celebrated birthdays by going out to eat or having store bought cakes. Mom would always fix our favorite meal and bake what kind of cake we wanted. This cake was a family favorite.
