20 oz boneless skinless chicken thighs, cut into 1-inch pieces
1 package (8 oz) mushrooms, thinly sliced
1 onion
4 cloves of garlic
2 tbsp onion powder
2 tbsp garlic powder
2 tbsp Italian seasonings
1 pouch (8.8 oz) cooked long grain & wild rice
1 1/2cups half-and-half
1 1/2 cups Progresso reduced sodium chicken broth (from 32-oz carton)
Salt and pepper to taste

Step 1
spray your non stick pot with cooking spray. Cook chicken over medium-high heat, with all your seasonings stirring occasionally, about 6 minutes or until browned all over. Transfer to plate, and set aside.

Step 2
Add mushrooms, garlic and onion to pot; cook 6 to 8 minutes, stirring occasionally, until soft and golden brown.

Step 3
Cook rice as directed on the pouch.

Step 4
Add chicken, rice, half-and-half and broth to pot; heat to simmering. Reduce heat to low; cook 8 to 10 minutes or until chicken is no longer pink in center. Cover and simmer slowly.

Step 5
Remove soup from heat, and stir in a little shredded cheddar cheese until melted if desired.
