1 Deep dish pie crust
2 or 3 Tbsp chopped onion
4 to 8 slices of deli ham, chopped
1 10 oz frozen package of spinach, thawed (optional)
4 eggs
1 cup milk or half&half (nana's recipe)
1 cup shredded cheese
Dash of salt
Dash of pepper
Dash of nutmeg

Directions:
Directions:
Preheat oven to 350º. Bake thawed pie crust for about 7-8 minutes.

Saute onion in a little butter or oil. Sprinkle cooked onion on bottom of pie crust.

Squeeze water out of spinach and spread over the bottom of the crust.

Layer ham and cheese over top.

Combine eggs with milk, salt, pepper, and nutmeg. Pour over all. Top with Parmesan cheese.

Bake 350º for 45 minutes or until knife inserted in the center comes out clean.
