3/4 cup extra-virgin olive oil
3 Tbsp red or white wine vinegar
2 tsp minced red onion
2 tsp Dijon mustard
1/2 tsp dried oregano or basil
1 garlic clove, minced
1/2 tsp salt
1/4 tsp pepper

Directions:
Shake all of the ingredients together in a jar with a tight fitting lid. The dressing can be refrigerated for up to 7 days; bring to room temp, then shake vigorously to recombine before using.
