COOKIE DOUGH
1 c. butter
2 c. brown sugar
2 eggs
1/2 t. lemon extract
1 t. baking soda
3/4 t. nutmeg
1/2 t. salt
3 C. Flour
1/2 C. Milk
3 C. Oatmeal (ground in food processor or grinder)
1 lb. Dates (cut fine)
1 C. Water
1 C. Brown Sugar
1 tbsp. Butter
1 C. Walnuts (finely chopped)

For Cookie Dough - cream together butter and sugar. Add eggs and lemon extract and mix. In separate bowl sift together baking soda, nutmeg, salt and flour. Take these dry ingredients and alternate with milk into butter mixture. Stir by spoon (or briefly with mixer) the ground oatmeal. Chill. Roll and cut into small rounds and bake for 6 minutes.
For Filling - put dates, water and sugar in saucepan. Cook until thick and then add butter and nuts. Cool. Spread on cookie and top with another.

This makes quite a few cookies, depending on how large your cookie cutter is. I use a small round and end up with about 100 cookies. This recipe came from my Grandma Bernice Jorae. It is another Christmas favorite.
