8 thick-sliced bacon strips, chopped
1 medium onion, chopped
1 medium carrot, chopped
16 oz. dried split green peas, rinsed
1 smoked ham hock
1 bay leaf
1800mL chicken broth
½ cup heavy cream
½ tsp. salt
½ tsp. pepper

In a large pot cook bacon until crisp. Remove with slotted spoon, drain on paper towels.

Add chopped onion and carrot to bacon drippings; cook for 8-10 minutes or until onions tender. Stir in split peas, ham hock, bay leaf and chicken broth. Bring to a boil; reduce heat and simmer 1-1½ hours or until split peas tender, stirring occasionally.

Discard bay leaf; remove ham hock. When cool enough to handle remove meat from bone and cut into cubes. Discard bone.

Puree soup using immersion blender. Stir in cream, salt, pepper, ham and bacon.
