1 (6 to 7lbs) pork roast with quenne (skin)
1 Tablespoon Cajun seasoning
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 cup flour

Directions:
Directions:
Preheat oven to 325º Remove pork roast from refrigerator about 30 minutes before cooking. Wipe thoroughly with damp cloth or damp paper towels.

In a small bowl mix together the seasonings and rub them on all sides of the roast and in all crevices. Then rub the flour all over the roast including the skin.

Put roast in a heavy pot (magnalite or cast iron) skin side up. Bake uncovered at 325º for 4 hours. DO NOT BASTE, as this will make the skin soft rather than crackling good.

Remove from the oven and place roast on a platter, carve into individual servings making sure everyone gets a piece of the skin. Add 1/4 cup water to the drippings in the oven pot and stir to make a gravy and heat a few minutes. Serve gravy over cooked rice.
