1 pkg active dry yeast
2 c lukewarm water (105 F-115 F)
1/4 c sugar
2 T butter or margarine
2 t salt
1 c nonfat dry milk
5 1/2 -6 c flour
1 egg white- for glaze
For sesame seed bread: 1/4 c sesame seeds for topping
For white bread: use all white flour
For whole wheat bread: use 4 c white flour and 1 1/2-2 c whole wheat flour
For multi-grain bread: Use 4 c white flour, 1 c whole wheat flour, 1/2 c EACH whole bran cereal, wheat germ and rye flour

1- In large mixing bowl, dissolve yeast in water; add sugar, butter, salt and dry milk. Set aside for 5 minutes.
2- Stir in 3 c flour, beat 50 strokes. Add 1 c more flour. Cover; let rest 30 minutes.
3- Add remaining flour until stiff dough forms. Turn out onto lightly floured board; knead 10 minutes. Put in lightly oiled bowl. Cover and let rise until doubled.
4- Divide dough into two parts. Shape into two flat round loaves.
5- Cover, let rise until double (1 hr at 85º)
6- Brush with egg white and sprinkle with sesame seeds ( as desired).
7-Bake at 375º for 25-30 minutes.
