13/4 lb boneless, skinless turkey breast
2 cloves garlic, thinly sliced
2 tbsp chopped fresh sage leaves
2 tbsp fresh rosemary leaves
1 tbsp butter
6 small carrots cut into half inch pieces
1/2 med onion thinly sliced
1 cup chicken broth

Directions:
Preheat oven to 350. Slice horizontally through turkey breast with knife parallel to cutting board, stopping an inch from opposite edge, open up breast. Cut small slits evenly across inside turkey and insert garlic. Sprinkle inside breast with half of the herbs. Roll up the turkey jelly style starting from the narrow end,secure with toothpicks or kitchen string. Brisk turkey with butter and then sprinkle with remaining herbs. Arrange turkey in roaster and add carrots and onions. Roast 60 minutes or thermometer in thickest part reads 165-170 or 73-77c. Remove all to platter, cover with foil and let rest for 15 minutes. Meanwhile, place roasting pan over two burners and add chicken broth to juices. Bring to boil over high heat, scraping bits from bottom of pan. Reduce heat to low, simmer 10 minutes, stirring occasionally or until reduced by half. Slice turkey, serve with vegetables and juices.
