Pepperoni Bread Recipe

1 lb. fresh pizza dough
1 lb. shredded mozzarella cheese
1 lb. deli pepperoni, sliced wafer thin
1 egg, beaten

Preheat oven to 350 degrees. Spray bottom of cookie sheet with cooking spray.

Clean counter, dry and spread about a tablespoon of flour on counter roughly the size of a large pizza. Take dough, lightly spread some flour on all sides of dough to prevent sticking to counter. Put dough on counter and roll out with rolling pin, shaping it roughly into a circle by pushing on all sides until it is about the size of a large pizza (doesn't need to be "perfect", just as close as you can get it).

Then layer pepperoni all over dough, leaving about 1/2 inch border around the edges. Sprinkle cheese evenly over pepperoni, again not within a half inch of edge.

Roll the dough by starting at one end and rolling up. Put roll on cookie sheet with the seam down and bend slightly to form a crescent shape. Leave small openings on each end of the crescent to allow oil from pepperoni to escape.

Bake bread in oven until golden brown about a half hour or so. Brush bread lightly 3-4 times during baking with beaten egg using a pastry brush so that the bread gets to be a nice golden color. Discard any unused egg. Slice bread with bread knife after it has cooled somewhat.

Brush lightly with egg as you just want to make the bread a nice golden color, not wind up with scrambled eggs on top of your bread. :-)
