1 tablespoon parsley
1 teaspoon salt
1/4 teaspoon pepper

Directions:
Mix all ingredients together in large bowl until thoroughly mixed. Shape meat into round balls (size of small golf balls). Place on cookie sheet with sides NOT touching. Place uncovered sheet in freezer and freeze about 2 hours. When partially frozen, take meatballs off cookie sheet and place in large Ziploc bag and put back in freezer (freezing on tray first prevents them from sticking together in bag).

Personal Notes:
When ready to cook meatballs, take out as many as needed from freezer and add to Mom's homemade sauce (recipe in cookbook). Cook about 1.5-2 hours. Can also add Italian sweet sausage and cook with the meatballs. If you don't have time to make homemade sauce, can use jarred marinara sauce. Serve with garlic bread and salad. Can make extra and make meatball grinders the next day.
